I thought I would share this yummy recipe for homemade pancakes. My kids love them! HJ requested them for breakfast this birthday morning. I usually won't make a big breakfast on a day when we have to be somewhere (Pirate art camp for HJ!) but I made an exception for such a special day! They are super easy and yummy!
HJ'S BIRTHDAY PANCAKES
1 1/2 cups buttermilk
1/4 cup veg. oil
1/4 cup sugar
1 egg
1/2 cup whole wheat flour
1/2 cup all purpose flour
1 1/2 teaspoons baking powder
1 tsp baking soda
Whisk all ingredients together. Drop a silver dollar size dollop of batter on a hot skillet. When edges appear to harden, flip the pancakes and finish cooking the other side. (These are great with either blueberries or chocolate chips added to the batter.)
